I wish you could come over now and try a spoonful because I just made it for Thanksgiving dinner tomorrow.
My husband gave it a taste test and he said it’s perfect! He’s the one I like to please the most since he raves… and I like when he does that.

It’s crunchy, sweet and tart and just plain mouth-watering.
Raspberry balances the cranberries very nicely.
I’ve served this dish at family holiday dinners for over 15 years and get compliments every single occasion.

Amazing Cranberry Salad
1-1/2 pkgs (12 oz each) fresh cranberries, about 4 cups
1 orange, peeled and chopped
3 cups water (1 reserved)
2 packages (3 oz each) raspberry-flavored gelatin
2 cups sugar
1 cup crushed pineapple, drained
2 ribs celery, finely chopped, about 1 cup
1 cup chopped walnuts
1/2 tsp salt (optional)
In large pot bring cranberries, orange, and 2 cups of water to a boil. Turn heat down and add gelatin and sugar and stir until dissolved, about 2 minutes. Remove from heat and add 1 cup of water, pineapple, celery, walnuts, and salt then mix. Pour into serving bowl, allow to cool then cover and refrigerate 8 hours or overnight.
*Fresh Cranberries are not always available in the stores after Christmas. Freeze extra bags to prepare in the spring for Easter dinner.
