Mango Salsa

Wow! This salsa is a refreshing change from traditional restaurant-style.  I was inspired to make it after my husband brought home leftovers that included mango salsa, which we promptly devoured.  This version is just as delicious and bursts with spicy-sweet, citrusy flavor. Don’t be surprised if you find yourself scooping every last bit from the bottom of the bowl in one sitting.

Fresh Spicy Mango Salsa

1 – 14.5 can dei Fortelli Mexican Chopped Tomatoes
1 Tbsp green onions, chopped
2 Tbsps fresh cilantro, chopped
juice of one lemon
juice of one lime
1-1/2 cups fresh mango, diced small
pinch of kosher salt

In food processor pulse 1/4 of canned tomatoes and 1/2 cup of mango together. Add chopped onions, cilantro, remaining tomatoes, lemon and lime juices and blend smooth. Add 1 cup chopped mango, pinch of salt and mix with a spoon. Serve with tortilla chips.
