Fresh guacamole is one of my family’s favorite snacks with tortilla chips, but we also love it as a topping for our creamy Cheesy Chicken Enchiladas and beef tacos. It’s so simple to make and always a hit at gatherings. The best part is you only need 4 healthy ingredients — no powder packets here! Lemon or lime (your choice) citrus gives a natural, salty flavor without the addition of sodium.
Fresh Guacomole
3 – 4 ripe avocados, peeled and diced
2 green onions, chopped
Cilantro leaves, chopped (approximately 1/4 cup)
1 lime or lemon
Toss or mix diced avocado, chopped green onions and cilantro, depending on the degree of chunkiness or smoothness you prefer.
Roll lemon or lime with palm of your hand on counter to release juices inside the peel, then cut in half. Squeeze juice from each half over the bowl, through your fingers to catch seeds. Mix again and serve. Fresh, simple, all-natural and delicious!
